Creamy Banana Ice

Ingredients:
2 bananas, peeled, sliced, and frozen for several hours
1 Tablespoon milk
 
Directions:
1. Place the frozen bananas into a food processor or blender.
2. Add the milk.
3. Puree the bananas and milk until they are creamy.
4. Spoon the mixture into bowls and serve right away.
 
Makes two servings.
 
Instead of bananas you could freeze mangoes, strawberries, blueberries, pineapple, or whatever fruit you like. Just cut larger fruit into small pieces first.
Then place the fruit in a single layer on a dish that is freezer-safe. You could try mixing several kinds of fruit together. (Approximately 1 cup of fruit = 1 serving.)
Or to make this recipe into a yummy fruit-drink, add more milk. You can make it as thin or as thick as you want.

Creamy Iced Mocha



Time for some java jitters! 

If you are a coffee lover, you will not be disappointed!


Ingredients:

2 cups strong coffee - room temp or chilled

2 1/2 cups vanilla soy milk

6 Tbls. chocolate syrup

2 1/2 Tbls. agave nectar


Brew double strength coffee (2 Tab. coffee to 1 cup water)

In a blender combine all ingredients and blend for 2 minutes until smooth and frothy.

Pour into glasses and top with shaved dark chocolate!


Makes 4 servings



Creamy Mocha Cicles


For a hot summer day treat pour prepared iced mocha into popsicle makers and freeze for 4 hours. Yum!

Cafe au Soy!

Café au Soy!
 
 
Ingredients:
 
1 ½ cups vanilla soy milk
 
1 ½ cups coffee, extra strong* and fresh
 
Agave nectar or cane sugar if you like



Directions:


1. Pour the soy milk into a medium saucepan and heat over medium heat.

2. As the milk begins to heat use a whisk to whip air into the milk. Whisk constantly as it comes to a slight boil. The soy milk should froth up and double in volume.

3. Remove the milk from the heat.

4. Divide the coffee between two cups. If you're sweetening the coffee add your sweetener now.

5. Pour the milk evenly between the cups making sure to use all the froth!




*To make extra strong coffee use 4 Tbls. fresh ground coffee to 2 cups filtered water.

Berry Banana Smoothie
 
Ingredients:
 
6 strawberries
2 bananas
2 cups organic vanilla soy milk
1/2 cup plain organic yogurt (if you're
dairy-free use soy yogurt)
2 Tbls. agave nectar

1. Slice and freeze fruit for several hours in a freezer bag or plastic container.

2. When the fruit is frozen place in a blender and use the crush ice or chop setting until the fruit is fine.

3. Add the rest of the ingredients and puree or liquefy for 2 minutes.

The smoothie will be creamy and frothy!

 
Makes 4 servings.

For a great sugar-free treat pour prepared Berry Banana Smoothie into popsicle makers and freeze for at least 4 hours.

The kids will love it!
